Laura is a graduate of Gustavus Adolphus College, with a degree in Management and Psychology and of the University of North Carolina Chapel Hill with a Masters Degree in Healthcare Administration. She has 13 years of experience in hospital operations consulting. In addition to her passion for whole food nutrition, she is also an avid CrossFitter and loves to water ski and hike.
Reason for becoming a Certified Food Over Medicine Instructor:
Until I decided to educate myself by reading books by T. Colin Campbell, Dr. Caldwell Esselstyn, and Dr. Pam Popper, I realized that I knew very little about nutrition. I have since developed a passion for sharing what I have learned and educating about the benefits of whole food nutrition. Dr. Popper’s Food Over Medicine certification course was another wonderful way to add to my own education so that I can in turn, share the message with others.
