Nevertheless, health and wellness communities agree that diets emphasizing fresh, whole ingredients and minimizing processed foods are superior for overall wellness. The whole-foods, plant-based diet does just that. It focuses on minimally processed foods, specifically plants, and is effective at stimulating weight loss and improving health.
Reason for becoming a Certified Food Over Medicine Instructor
I have become a whole food, plant based nutrition kind of person one year ago and for 48 years I was the “eat everything in moderation” kind of person until I was advised to watch Forks Over Knives. I consider myself as one of the lucky ones who did not have to make this sudden diet shift due to a major health crisis. I was grateful to have been enlightened but I was also so angry for being left in the dark about nutrition and health my entire life.
I first completed the certificate program on Plant Based Nutrition on-line from E-Cornell by Dr. T. Collin Campbell. Next I enrolled in Food Over Medicine Certificate Program by Dr. Popper. I am still at the very beginning of this life time learning adventure. My goal is to keep this life-changing, life-saving information available to everyone in my circle.
